Chili
Ingredients:
(amounts vary by amount of meat and flavor preference)
Ground Beef
Kidney Beans
Pinto Beans
Tomato Paste
2+ Bell Peppers
(use different colors!)
1 Onion
Minced Garlic
Chili Powder
Jalapenos
Red Pepper Flakes
Adobo/Salt
Pepper
Directions:
In a large pot brown the meat on medium heat with garlic, onion chopped, chili powder, red pepper flakes, adobo/salt, and pepper.
*Remember to be generous with the seasonings. You will be adding many more ingredients which will water down the taste. If you are nervous add a smaller amount in the beginning and add more once all the other ingredients have been added.
*The more of the chili powder, red pepper flakes, and jalapenos you add the spicier. You can reduce some of the spice of the jalapenos by removing the seeds...this will burn your hands, I am talking from experience.
Once the meat is brown add the pinto and kidney beans, and the tomato paste. Add a small amount of water to help everything mix together.
Chop and add the bell peppers to the chili.
At this point add seasonings until it is to your personal taste.
Let chili simmer on medium heat. Once the chili starts to cook down and become thick reduce the heat.
Serve hot, add cheese to the top for a little flavor and look.
