Coconut Cupcakes
Ingredients:
2 1/2 c Flour
2 Tsp Baking Soda
1/2 c Sweetened Coconut Flakes
3/4 c Butter Softened
1 1/2 c Sugar
3 Eggs
1/2 Tsp Vanilla
3/4 c Milk/Coconut Milk
Directions:
Oven: 350°F
Blend butter, and sugar until smooth.
Add eggs,coconut flakes, and vanilla and mix until blended.
Mix in a separate bowl flour, and baking soda.
Add flour and milk to wet mixture alternating between the two starting and ending with flour.
Mix well until fully blended.
Spoon batter into lined cupcake pan.
Bake cupcakes for 15-20 minutes or until a toothpick in the center removes clean.
